It’s been slowly turning to fall weather here, and I cannot wait. What better way to celebrate than with pumpkin?
Blend 1/4c oats, 1c coconut yogurt, a few splashes of almond milk, a squeeze of agave, 1 tsp pumpkin pie spice, 1/2c pumpkin (I used a few more tbsp than this), a tsp or so of vanilla and a grind of pink salt.
-The coconut yogurt leaves behind a coconut-y taste but I think it’s great. If you haven’t tried toasted coconut on top of a slice of pumpkin pie, you haven’t lived!
-The recipe makes multiple servings and is thick. I recommend adding more liquid as the oats suck up any moisture after a few minutes.
-You can add more or less sweetener. Because I bought a vanilla flavor cocogurt, I didn’t need much agave as the yogurt was almost sweet enough
-For those that eat dairy, Fage makes a wonderful greek yogurt (they have it at Costco) that my boyfriend loves. That would be an amazing option here.
