I interchange my recipes so that the same food all week long isnt boring.
For lunch today I had a green smoothie w/ a salad.
The smoothie is raspberries, baby kale, baby spinach, 1/2 frozen banana, 1C coconut milk/almond milk mixture, 1 tbsp ground flax seed and 1 tbsp chia seeds.
The salad is a base of romaine and baby spinach, topped w/ red onions, black beans, avocado and broken up pieces of the corn patties. Topped with salsa.
I also splurged today and went to my favorite coffee shop. I got an iced latte w/ almond milk. They make their almond milk homemade and its super delicious!
Complete basically nutrionally void breakfast. Thats what happens when you have 15 min to make my meal and eat.
3 tiny purple potatoes sauteed in a tinsy bit of olive oil and cajun spices. Latte w/ pumpkin spice sprinkled on top & an apple.
I vegan-ized it w/ 2 flax eggs, unsweetened almond milk and soy free earth balance. i used fresh corn on the cob and two jalapenos from my garden. i plan to put these on a salad of baby spinach/romaine, dry cranberries, shredded carrots avocado and top w/ salsa

Feeling blue the last few days. Going to nurse my stuffy nose and super sore throat with copious amounts of raw honey and tea
Excuse the horrible picture, I was eating outside and jut took a snap. Blend the following ingredients: juice of 3-4 limes, a splash of oil (I use a “mediterranian mix” because olive is a bit too overpowering to me in dressings), a half cup of plain yogurt (I used coconut), a few shakes of pink salt and one whole bunch of cilantro. When you add the yogurt, I notice that the oil doesn’t solidify in the fridge. Hooray!
